Electronic nose, also known as odor scanner, is a high-tech product developed to simulate the smell organs of animals. It quickly provides the overall information of the sample to be tested with a specific sensor and pattern recognition system, indicating the hidden characteristics of the sample.
Electronic nose mainly consists of three functional components: odor sampling operator, gas sensor array and signal processing system. The main mechanism by which electronic noses recognize odors is that each sensor in the array has a different sensitivity to the gas being measured. It is widely used in food analysis, such as animal products, aquatic products, essence, milk and dairy products, grain, fruits and vegetables.
