Food Chemistry and Analysis Teaching Laboratory is located in Room 9E606 (about 100 square meters), Nanshan Building, Xinzhuang Campus, Nanjing Forestry University, Nanjing. This laboratory is used in food chemistry experiment, food analysis experiment and graduation project teaching activities. It is designed to accommodate 32 students. The laboratory provides the equipment, instruments and glassware required for the above courses. The key equipment is ventilating kitchen, Kjeldahl nitrogen tester, coarse fiber tester and rotary evaporator. The total value of instruments and equipment is more than one million RMB. The laboratory mainly serves for teaching and research, and its main teaching objects are food science and engineering students. At present, the laboratory undertakes one national college students' innovation training project, two provincial college students' innovation training projects, and three university students' innovation training projects. In the laboratory, students study and use advanced instruments and equipment related to food chemical and analysis, master the working principle and use method of the instruments, correctly use the instruments and equipment to carry out food related experiments safely and effectively, and correctly collect experimental data. Students' experimental operation skills, comprehensive analysis and problem-solving abilities are cultivated, and it lays a good foundation for the future work related to food chemistry and analysis.  


This is a panoramic view of Food Chemistry and Analysis Teaching Laboratory. In this laboratory, students can determine the content of starch, ash, protein, vitamins and fat in food. They also can analyze the pesticide residues in fruits and vegetables, sodium nitrite content in meat products and calcium content in dairy products. In addition, students can also complete some comprehensive experiments, such as the analysis of the conditions for the formation of apple pectin gel, the effect of pH value on the color of anthocyanin solution, and the effect of sugar concentration on the water activity of fruit juice.

This is the main equipment in the Food Chemistry and Analysis Teaching Laboratory. The instruments and equipment used for sample pretreatment include Muffle furnace, Automatic kieldahl apparatus, crude fiber determination instrument, rotary evaporator, ultrasonic crusher and organic film separation experiment machine. The instruments and equipment used for analysis are UV-visible spectrophotometer, Microvolume spectrophotometers, gas chromatograph, high performance liquid chromatograph and Microplate System, etc. In addition, the laboratory also has a lot of conventional equipment, such as conductivity meter, pH-instrument, pure water meter, ultrasonic cleaning machine, fuming cupboard, thermostatic bath, Water bath etc..
